Simple Protein Pancakes

The hardest part about staying fit is keeping a well balanced diet that complements my workout routine.  I've learned (the hard way) that having a healthy diet really does improve my workouts and energy.  If you know me, you know I love my carbs.  Finding healthy substitutes that actually satisfy can be a difficult task.  Thankfully, I found this super simple protein pancake recipe online that actually tastes and looks like real pancakes.  The recipe is super simple.  To make two pancakes (perfect for 1 person) I use:

  • 1 banana (mashed) -- super ripe bananas are best for this
  • 1 egg
  • 1/4 cup of vanilla protein powder
  • butter (to oil pain)
Just combine the banana, egg, and protein powder together until blended well.  Oil up your pan with some butter, and cook for about 1 min on each side.  You can add fruit to the mixture as well -- I added blueberries to mine with a touch of agave maple syrup!
