Honey Cinnamon Collagen Overnight Oats Recipe

Overnight oats have been a game changer in our house.  Since Adam and I both have super busy schedules, it's easy to make poor breakfast choices when we don't have time to make our breakfast at home.  Enter... OVERNIGHT OATS! Never really understood what all the rage was until I tried it out for myself.  And now that we have tried lots of different versions of this recipe, I'm ready to finally share the one that isn't watery, but most importantly the one we never get tired of!

Any time I need to mix it up, I just add fruits, nuts, or granola to it and voila a totally different taste.  And the best part?  They stay good in your fridge for a few days!  I usually make these in the beginning of the week, so we can grab and go as we please on weekday mornings.

My favorite part of this recipe is that oats + chia seeds = lots of soluble fiber (the type of fiber that helps lower blood cholesterol and glucose levels)! Making this recipe perfect for mornings and keeping a balanced diet. So here it is!:

Honey Cinnamon Collagen Overnight Oats
1/2 cup of oats
1 cup of milk (we use oat milk, but when oat milk isn't available we have used unsweetened vanilla almond milk and consistency was just as good!)
4 teaspoons of chia seeds
1 scoop Orgain Collagen Peptides
1 teaspoon cinnamon (sometimes we swap this out for cacao or almond butter when we really want to change it up)
1 teaspoon honey (or add your favorite sweetener/skip all together for sugar-free)
1 teaspoon vanilla extract

Mix it all up, cover up, and enjoy in the morning with your favorite fruits + nuts!
